Ahh! Thanksgiving or should I say “Turkey Day” is with us again, we all get stuffed literally on the holiday meal and invariably there is turkey left over.  What to do with that extra bird is the question?  The answer is that there is a lot we can do with left over turkey.  We’ve put together a couple of very good turkey left over recipes that we think you will enjoy.

The first one is a favorite.  It’s a favorite because I like dumplings.  Turkey is a great complement to traditional dumpling recipes.  This recipe uses the dark and white meat plus plenty of vegetables.  Check it out…..

Ingredients:

  • 8 cups smoked turkey, sliced
  • 5 cups chicken broth
  • 4 ˝ Tablespoons butter, divided
  • 1 medium chopped onion
  • 1 bag frozen mixed vegetables
  • 2 Tablespoons chopped fresh parsley
  • ˝ cup half & half
  • 2 ˝ Tablespoons flour
  • 1/8 teaspoon poultry seasoning
  • 1 cup sliced mushrooms
  • 1 Tablespoons dry sherry
  • Salt and pepper to taste
  • 1 cup chopped celery

Directions:

  1. In a large pot, over medium heat, add 2 tablespoons of the butter, mushrooms and onions.
  2. Sauté about 2 minutes. Set aside.
  3. Add the rest of the butter to the pot.
  4. Stir in the flour until all the butter is absorbed.
  5. Add the chicken broth stirring until smooth.
  6. Then add the mushroom mixture and all the other ingredients to the broth except the turkey.
  7. If too thick add a little water.
  8. Simmer over low heat while making the dumplings.

Dumplings

Ingredients

  • 1 small box biscuit mix
  • 1 teaspoon chopped parsley
  • Pinch of seasoned salt
  • Pinch of poultry seasoning

Directions:

  1. In a bowl add the season salt, poultry seasoning, and parsley to the biscuit mix.
  2. Complete the mix as directed on the box.
  3. Drop the biscuits by the spoonful into the simmering broth pot.
  4. Space the biscuits evenly.
  5. Cover the pot tightly and reduce the heat to medium low.
  6. Steam the dumplings about 9 to 11 minutes.
  7. Remove the cover and stir the mixture once.
  8. Remove the dumplings and place in a shallow bowl.
  9. Cover the dumplings with smoked turkey slices.
  10. Then spoon the vegetable /broth mixture over the turkey.
